Chongqing Mala (重庆麻辣)
Chongqing Mala is the "authentic origin" of the famous Mala hotpot soup base, hailing from Chongqing, China, considered the true birthplace of Mala. The hallmark of Chongqing Mala lies in its perfect balance of intense spiciness and numbing sensation, a result of combining dried chilies and Sichuan peppercorns (花椒, Huājiāo) which create a unique tingling on the tongue. This distinctiveness sets Chongqing Mala apart from adapted Mala flavors found in other regions.
Characteristics of Chongqing Mala
Intense Spiciness + Tongue Numbing: Uses a blend of various dried chilies and Sichuan peppercorns cooked together.
Diverse Spices: Such as star anise, cinnamon, cloves, ginger, and garlic, to create a rich, aromatic fragrance.
Vibrant Red Chili Oil: Uses chili oil (辣油) to give the soup a beautiful deep red color and bold flavor.
Rich Broth: Simmered with pork bones or beef bones to achieve a mellow and flavorful soup base.
Eating Culture
Chongqing Mala is a symbol of the traditional Hotpot (火锅, Huǒguō) dining style for the people of Chongqing. When eating, it's common to use a "Yinyang" divided pot (鸳鸯锅), which features both a spicy and numbing Mala soup base and a milder clear soup, allowing diners to choose their preferred level of spiciness.

How to Prepare Shabu-shabu Dipping Sauce
Choose a Base Sauce
Start by selecting the main sauce that will define the essential flavor of your dipping sauce.
Sesame Sauce (芝麻酱) → Rich, nutty, and savory.
Garlic Oil Sauce (蒜泥油碟) → Light, fragrant, and refreshing.
Satay Sauce (沙茶酱) → Mellow, savory-sweet, and umami.
Japanese Soy Sauce / Light Soy Sauce → Mildly salty, highlighting the freshness of ingredients.
Add Flavor Enhancers
Once you've chosen your base, add ingredients to enhance the depth of flavor.
For Aroma: Minced garlic, chopped spring onions, cilantro.
For Spice: Fresh chilies, chili powder, mala chili.
For Fresh Sourness: Lime juice, vinegar, Ponzu sauce.
For Sweet Mellowness: Granulated sugar, brown sugar, syrup.
For Richness: Fermented tofu (fu ru), oyster sauce, mushroom sauce.
Personalize Your Sauce
If eating with Clear Soup Base → Use a rich dipping sauce like Sesame Sauce or Satay Sauce.
If eating with Mala Soup Base → Use Garlic Oil Sauce or a dry chili powder sauce; this helps balance the spicy heat.
If eating Seafood → Use a soy sauce mixed with fresh chilies, garlic, and cilantro to bring out the seafood's flavor.
If you prefer a Mellow Thai Flavor → Add ground peanuts, Thai sukiyaki sauce, or sweet and sour sauce.
✨ Additional Tips
Try mixing different combinations, such as adding ground peanuts to sesame sauce for extra aroma, or adding cilantro to garlic oil sauce for a fresh touch.
Taste little by little and adjust to your preference to find "your perfect dipping sauce" recipe.
✨ A good dipping sauce is the heart of a delicious shabu-shabu experience! At Zhonghua Hotpot, we provide a full range of condiments for you to enjoy mixing your own flavors, or you can ask our staff to prepare the restaurant's special recipe for you.
